Welp, we just wrote several gigantic checks to the IRS this week. Cocktails are definitely needed. Needed to numb the pain of how much we had to pay, and also to celebrate that taxes are over. I’m sure you all could use one too.

I remember fondly when taxes actually gave me money back. That was in the good old days when I was 18 and working at Nordstrom. I would quickly use my tax refund to get some cute clothes for spring. Not anymore.

Between Shawn being self employed last year and working freelance doing audio installs in homes, our videography business, this blog, and our rental property, that is a lot of income that hadn’t had any taxes taken out yet. Guess you’ve got to spend money to make money.

After sending off those checks, we really needed a cocktail. With this beautiful, sunny weather we’re having, I was craving something light and fruity. Blackberry mojitos it is!

I love mojitos. I first learned about them when I was a bartender in college. But at the bar I was working at, they were making mojitos allll wrong. They just used rum, soda water, a packet of sugar, and a pre made mojito mix that had mint and lime “flavoring”. A mix! No no no. Mojito’s need to have fresh mint and fresh lime juice. Anytime a customer would order one, I would warn them by whispering, “They’re not that good here. Trust me. But I can make you a great cosmo!”

When I make mojitos at home, they have plenty of fresh mint and fresh lime juice. I don’t like cocktails that are too sweet, so I don’t add in any sugar. I am convinced that all hangovers are from the sugar in drinks, not the alcohol.

To add a little bit of sweetness, I like to add in some fresh fruit juice. My current favorite mojito version is this blackberry mint mojito.

I blend the fresh blackberries up with a little bit of water, otherwise the juice is very thick. I then strain the juice thru a fine mesh sieve so there aren’t a ton of blackberry seeds that will just get stuck in my straw or my teeth and make me look like a dope.

You could use thawed, frozen blackberries if you don’t have access to fresh ones. But it’s spring! Get the fresh ones.

These Blackberry Mint Mojitos have rum, fresh mint, fresh lime juice and soda water mixed with fresh blackberry juice. Sugar free to keep it skinny. A refreshing, fruity cocktail perfect for spring time!

Ingredients 
 

Blackberry Juice

  • 1 pint blackberries
  • 1/2 cup water

Blackberry Mint Mojito

  • 6 whole mint leaves
  • juice from half a lime
  • 2 oz rum
  • 2 oz blackberry juice
  • soda water

Instructions 

  • In a blender, combine the blackberries and water. Blend until pureed. Strain the juice thru a fine mesh sieve and discard all the seeds.
  • In a glass, add the mint leaves, juice from half a lime and the lime rind, and a splash of the soda water. Gently muddle to release the flavor from the mint leaves. Fill the glass with ice and add the rum, blackberry juice, and top with soda water. Stir to combine. Garnish with lime wedge, mint sprig and blackberries.
