Why Make Whole30 Homemade Almond Butter?

I love making my own almond butter. I will never buy it in the store again! It tastes better than anything I’ve bought from a store. Ultra smooth, creamy, and has the most intense, nutty almond flavor.

When I make it myself, the butter and oil doesn’t separate like it does with store bought. No need to stir and make a huge mess! It takes at least 2 months for my almond butter to even begin to start to separate like that. So think of how long that almond butter has been sitting on the shelves at the store, where the nut butter and oil is completely separated. Eeek!

Plus, it costs a fraction of the price to make your own. Store bought almond butter prices are outrageous!

How to Make Homemade Whole30 Almond Butter in a Food Processor

It is so easy to make homemade whole30 almond butter using my food processor. I prefer my food processor because it’s easier to scrape out the almond butter once it is finished. You can use your high speed blender too!

To make the almond butter, start off by roasting your almonds. By roasting the almonds, you are intensifying the deep, nutty flavor. Your resulting almond butter will have so much more flavor.

Roasting them also gets them heated up, and the oils in the almond warm, so they will break down much faster. Once you start the food processor, the almond butter will take just about 20 minutes to get smooth and creamy. Don’t worry, your food processor can handle it!

Best Almonds to Use for Homemade Whole30 Almond Butter

I only make my own almond butter because I know what kind of almonds are being used.

After doing my research, I’ve become very careful about the almonds I buy. All almonds sold in stores have to be pasteurized by food regulations. And shockingly, most almonds are pasteurized by being sprayed with a chemical called propylene oxide (PPO), which is a known carcinogen. Even almonds labeled Raw are not truly raw since they have been pasteurized. (If you soak them in water, they won’t sprout)

The best choice for store bought almonds are almonds that are pasteurized by steaming. Trader Joe’s, Whole Foods, Sprouts and Costco raw almonds are pasteurized by steaming, and are all safe to use.

Organic almonds are always steam pasteurized (no chemicals are permitted in organic products). As long as you are buying organic almonds, you are always safe!

If you want truly raw almonds, you can only source those from farmers markets or directly from the almond farmer because pasteurization laws only apply to store bought almonds.

Whole30 Homemade Almond Butter (Keto, Paleo)

This Whole30 Homemade Almond Butter Recipe is made in your food processor! Healthier, cheaper and much tastier than store bought!

Ingredients 
 

  • 3 cups organic, raw almonds
  • 1 teaspoon kosher salt, or more to taste

Instructions 

  • Preheat your oven to 350ºF. Spread the almonds in an even layer on a rimmed baking sheet. Roast the almonds for 10-15 minutes, until fragrant and golden brown.
  • While the almonds are still hot, add them to your food processor along with the salt. Blend for 20-25 minutes, scraping down the bowl and lid with a spatula if the clumps get stuck.
  • Will keep in a pint mason jar for 2 weeks at room temperature, or at least 2 months refrigerated.

Notes

You can also make this in your high speed blender! The times are the same. I prefer my food processor because it is easier to scrape out after.
