Grilled Chicken with Balsamic Berry Salsa

Balsamic Berry Salsa

  • 1 cup strawberries, hulled and chopped
  • 1 cup blueberries, whole
  • 1/4 cup finely diced red onion
  • 1/4 cup aged balsamic vinegar
  • 1/4 cup chopped mint
  • 1 teaspoon salt
  • 1 teaspoon honey (optional, substitute date paste for whole30 or leave out for keto)


Grilled Chicken

  1. Preheat your cast iron skillet over medium heat for 5 minutes.
  2. Pat the chicken breasts dry and season with salt and pepper.
  3. Add the olive oil to the cast iron skillet, and put the chicken in skin side down (if it has skin) and sear for 8-10 minutes until golden. Flip, and cook another 5-8 minutes until the chicken has an internal temperature of 165ºF.
  4. Remove the chicken from the skillet and rest for 5 minutes.

Balsamic Berry Salsa

  1. Combine all the ingredients in a medium size mixing bowl, and toss to combine. Taste, and add more honey/salt/balsamic/mint to suit your personal taste.
