Keto Avocado Egg Toast

Ingredients

Scale
  • 2 Cauliflower Thins⁠ (Trader Joe’s makes one, or Outer Aisle sells them on Amazon!)
  • half a small avocado⁠⠀
  • 1 tablespoon ghee⁠⠀
  • 2 eggs⁠⠀
  • 1/8 cup tomatoes, chopped⁠⠀
  • micro greens⁠⠀
  • kosher salt⁠⠀
  • 2 slices of bacon, cooked⁠

Instructions

  1. Toast the Cauliflower Thins in the toaster. PRO TIP! I put my toaster on it’s side so the thins stay flat. Otherwise they kind of sag down as they’re toasting if you keep the toaster upright.⁠⠀
  2. Mash the avocado on each toasted Cauliflower Thin using a fork. Season the mashed avocado with kosher salt.⁠⠀
  3. Scramble your eggs in ghee, then add on top of the toasts.⁠⠀
  4. Top with chopped tomatoes and micro greens. Serve with 2 slices of bacon.⁠⠀
