Almond Butter Balsamic Butter

Broccoli Salad

  • half a head romaine lettuce, thinly sliced
  • 1 cup spinach, chopped
  • 1/2 cup broccoli, finely chopped
  • 1/4 cup cucumber, thinly sliced
  • 2 tablespoons bell pepper, thinly sliced
  • 1 green onion, sliced
  • 2 tablespoons blueberries
  • half an avocado, sliced
  • 1/4 cup sliced almonds


  1. In the bottom of a salad bowl, add the dressing ingredients. Whisk with a fork to combine.
  2. On top of the dressing, add in all the salad ingredients. Toss to combine. Enjoy!


Nut Butter: My favorite nut butter to use for this is my mixed nut butter. Almond butter, sunflower butter, peanut butter, etc would all work. Use what you have!
