Keto Caramelized Onion + Rosemary Brie Bites

  • Author: Natalie
  • Prep Time: 5 minutes
  • Cook Time: 20 minutes
  • Total Time: 25 minutes
  • Yield: 10 1x

  • 2 tablespoons grass-fed butter, divided
  • 1 small yellow onion, sliced
  • 1/4 teaspoon kosher salt
  • 1/4 cup chopped roasted pecans
  • 2 tablespoons finely chopped fresh rosemary
  • 10 Supreme Brie Bites (code TASTESLOVELY for 15% off orders $30+, expires 12/31/2020), room temperature

  1. Heat your cast iron skillet over medium heat. Add 1 tablespoon of the butter, sliced onions and 1/4 teaspoon kosher salt. Cook until the onions are soft and caramelized, stirring occasionally. Should take around 15-20 minutes. I like to add in a few tablespoons of water every 5 minutes to keep the onions juicy and prevent them from burning.
  2. Add in the remaining tablespoon of butter, chopped pecans and rosemary. Stir and cook until fragrant, just a minute or so.
  3. Place the room temperature Supreme Brie Bites onto a cheese board. Top each brie bite with the onion mixture. Serve at room temperature.

Onion: I used a yellow onion, but you could use a red or white onion, or even shallots!

Nuts: I love pecans, but you could use chopped walnuts, almonds, pistachios, etc.

Herbs: I love rosemary, but thyme would work too.
