With all the amazing Mexican recipes I’ve been sharing over the past 2 weeks, you know I had to combine them to create the ultimate Whole30 ground beef burrito bowl!
This is such a delicious, filling and simple recipe that you will love for dinner and for make ahead lunches all week long.
What I love most about these beef burrito taco bowls (could even be considered a salad!) is that you can add in all your favorite things, and make it exactly how you like.
I love them most with romaine lettuce, fajita veggies, cauliflower rice, ground beef taco meat.
Then topped with fresh avocado, jalapeno and lime juice.
If you’re a meal prepper, this is the perfect meal prep to make! All of these ingredients are delicious enjoyed warm or cold.
Just prep all the components, and when it’s lunch time assemble them all in a bowl.

Whole30 Ground Beef Burrito Bowl (Paleo, Keto)
Ingredients
- 1 cup chopped romaine lettuce
- 1/2 cup fajita veggies
- 1/2 cup cauliflower rice
- 1/2 cup ground beef taco meat
- optional toppings: sliced avocado, guacamole, salsa, jalapenos, lime, cilantro, whole30 queso
Instructions
- Layer all ingredients in a bowl in the order listed. Top with favorite toppings. Enjoy!

Looks delicious, wonder if you can make it ahead and take to work for lunch.
Absolutely! Just keep it in the fridge until you’re ready to eat it. Pop it in the microwave for a couple of minutes and add the avocado garnish after!Â
These bowls were so good! We went with your optional reccs of cashew queso, avocados, and lime juice and they were delicious :) First dinner recipe of the New Year!Â
