Whole30 + Keto California Eggs Benedict

Ingredients

Scale

2 slices of tomato

2 pieces of cooked bacon (<- link to my oven bacon hack)

half an avocado, sliced

2 poached eggs (<- link on how to poach eggs)

Whole30 hollandaise sauce (<- link to hollandaise sauce recipe)


Instructions

On a plate, assemble the 2 slices of tomato. Top each tomato slice with 1 piece of bacon, slices of avocado, 1 poached egg and top with hollandaise sauce. Enjoy!

Notes

I get my sugar free bacon from ButcherBox, which I highly recommend!
