I can’t decide which is more exciting: how delicious this chili is, or how easy it is to make.
Actually, it might be how unbelievably healthy it is. This whole30 + keto instant pot chili tastes like the chili of your dreams, but has no beans or sugar!

Ingredients in Whole30 + Keto Instant Pot Chili
The real star of this chili is the beef. I get my organic, pasture raised, hormone + antibiotic free ground beef from ButcherBox. The taste can’t be beat!
Along with the ground beef I’m adding in tons of vegetables in all the colors of the rainbow. Onion, celery, zucchini, squash, bell peppers, canned tomatoes.
For spice I’m using canned diced green chiles, chili powder, cumin, oregano and smoked paprika. This is a mild spice, my kids are totally fine eating this. If you want more spice, add in more diced green chiles and chili powder. Maybe even cayenne!
Whole30 + Keto Instant Pot Chili No Beans
One thing this chili does not have is beans, which keeps in whole30 compliant + keto friendly. With all the ground beef and vegetables, you don’t even notice!
For fun toppings, I like serving mine topped with sliced avocado and some chopped cilantro.
Whole30 + Keto Chili Meal Prep + Freezing
The best part of this chili is that makes enough for 8 servings! So my family of 4 will have leftovers that I can use for meal prep lunches, or freeze for future dinners.

Whole30 + Keto Instant Pot Chili
Ingredients
- 2 tablespoons avocado oil
- 1 yellow onion, chopped
- 1 zucchini, chopped
- 1 yellow squash, chopped
- 1 red bell pepper, chopped
- 4 ribs of celery, chopped
- 2 cloves of garlic, grated or finely minded
- 2 teaspoons salt
- 2 teaspoons pepper
- 2 pounds ground beef, I get my 100% grass fed hormone + antibiotic free beef from ButcherBox, which I highly recommend!
- 2 14.5-ounce cans diced fire roasted tomatoes
- 1 15-ounce can tomato sauce
- 1 4-ounce can diced green chiles
- 3 tablespoons chili powder
- 1 tablespoon cumin
- 1 tablespoon oregano
- 1 tablespoon smoked paprika
- 1 cup chicken stock

Instructions
- Heat your instant pot over SAUTE. Add the avocado oil, and saute all the vegetables for 7-10 minutes until soft.
- Add the ground beef and break it up. Cook for 5 minutes.
- Add in the canned tomatoes, tomato sauce, spices + chicken stock. Stir to combine.
- Close with the lid, and make sure the vent is at SEALING. Hit CANCEL, then cook on HIGH PRESSURE for 15 minutes. Will take about 10-15 minutes to reach pressure, then it will start counting down from 15. After the 15 minutes is up, do a QUICK RELEASE, where you move the valve to VENTING to release all the steam. Once all the steam is gone and the float valve has dropped, you can safely open the instant pot.
- Serve warm topped with your favorite toppings: sliced avocado, jalapeños, cilantro, etc.
- Will keep in an airtight container refrigerated for 5 days, or frozen for 6 months.

I’ve made this 3 times since the start of fall- it’s soooo good and hits the spot every time. Plus it’s a great way to get those veggies in (I’ll admit I’m not a huge veggie eater 😬 so I rely on soups, stews, and chili!)

Which tomato sauce do you use? In Germany it’s impossible to get a can of roasted tomatoes or green chilies in a can. What would you recommend as a substitute?

If you are unable to get fire roasted tomatoes in a can in Germany, I would just substitute your favorite brand of regular canned tomatoes Kathrin. I don’t really have a favorite brand. Usually just go with whatever is on sale!

Yes, it’s summer……..but I felt like making chili!
I made the slow cooker version of this. It was very yummy, just a bit thinner than I would like, so next time I will add less chicken broth. Maybe just a 1/2 cup and then add more if I find it too thick.
I did not add the jalapeños either and found it just spicy enough for my family.

Wow, this chili is amazing! Perfectly seasoned, quick, and yummy. I used cut up tip roast and cooked it for 15 minutes under high pressure. I’ve been loving the leftovers for lunch every day!

Such a dumb question but I’m trying to input into my fitness pal and I can’t tell how much one serving is??
That is absolutely not a dumb question Kristen! So I double checked the liquids, veggies and meat in the recipe. I would think this should make about 64 oz of soup, so each serving would be about 1 cup. How fantastic that you are putting it into Fitness Pal. By the way, you can input all the ingredients and then put 8 servings and Fitness Pal will calculate it for you!
I had to cut beans out of my diet and thought I would miss them in chili – found this recipe and found I was sooo wrong! So delicious! My husband even loved it! I don’t have an instant pot, but it was still super easy on the stove. Definitely made it into my meal prep rotation!

This is a FANTASTIC recipe! Loved every bite! Do you happen to have an actual measurement of one serving? I’d love to share some with my Mother who is diabetic & she counts her carbs closely like a school marm!
I am so happy you like my chili! The nutritional information is based on the number of servings. I looked over the recipe and I came up with an approximate volume of 1.5 cups per serving. It’s a little hard to calculate because the veggies reduce a great deal. Again this is a rough estimate, but I sure hope it helps and your mother likes it!
First of all, this was amazing ! Second, I discovered a happy accident. I only had 1 lb of beef and cut the recipe in half but I was distracted and added all the amount of spices. I thought I had ruined it but it just made it deliciously spicy. Also, though I made this for dinner, this is sooo good as breakfast with a fried egg on top. Thank you for such a fantastic chili and where I don’t miss the beans!

This is the BEST chili I have ever made! The only alterations to the original recipe were:
1) browned and drained meat before adding to instant pot
2) used mild diced tomatoes with green chili added in instead of the fire roasted tomatoes and separate can of green chilis
3) put all veggies in food processor for a very fine dicing (picky family doesn’t like chunky veggies)
