Whole30 + Keto Pesto Shrimp Kabobs
You’ll toss the shrimp in pesto before skewering the kabobs. The sweet and salty basil pesto is the perfect pairing with the sweet and salty shrimp.
Not only is shrimp delicious, but it cooks so fast! Once you get the shrimp on the grill, it needs just 2-4 minutes per side. This is why I recommend doing any vegetables on separate skewers. Even though it looks pretty to have shrimp and veggies on the same kabob, the shrimp cooks so so so much faster than the veggies. Best to pull the shrimp off as soon as they’re done, and let the veggies keep cooking until they’re tender.
Serving
After the pesto shrimp kabobs are done cooking, I like to brush them with pesto 1 more time for extra flavor.
For the ultimate summery dinner, I like serving them with my keto pesto caprese salad, and some sausage pesto kebabs for a surf and turf type of meal. Yum!

Whole30 + Keto Pesto Shrimp Kabobs
Ingredients
- 1 pound wild caught raw shrimp, thawed (I prefer getting peeled + deveined)
- 1/4 cup pesto, plus more for brushing
Instructions
- Preheat your grill over high heat (we use our Traeger and heat it over HIGH). Clean the grill grates.
- In a medium size bowl, add the shrimp and pesto and toss to combine.
- Skewer the shrimp on your skewers.
- Grill the shrimp for just 2-4 minutes per side, until the shrimp is opaque.
- Remove from the grill, and brush with a little more pesto.
- Serve warm. Leftovers will keep in an airtight container for at least 5 days.
- I love this dinner with my keto pesto caprese salad, and I'll usually make some sausage skewers that I tossed in pesto as well. Any chicken, beef or pork sausage works! (The sausage skewers take about 10 minutes per side).
