Whole30 + Keto Pork Chops with Bacon Mushroom Sauce
Whole30 + Keto Pork Chops with Bacon Mushroom Sauce Recipe + Video – a low carb, healthy and comforting dinner! Paleo, gluten free, grain free, dairy free, sugar free, clean eating, real food.
Look at this ultra cozy dinner, that is oh so healthy and only 6 carbs!
You’re going to want to make this whole30 + keto pork chops with bacon mushroom sauce again and again all winter long.
Seared Pork Chops
If you haven’t tried the ButcherBox pork chops yet, I cannot recommend them enough. Seriously my favorite cut of meat I get from them! Even more than filet mignon. It has so much flavor!
I sear it off in the cast iron skillet, then finish roasting it in the oven.
It is paired perfectly with this bacon mushroom sauce. It is thickened slightly with just 1 teaspoon arrowroot powder, so still low carb and perfect for keto.
I highly recommend serving this with my mashed cauliflower. It is so good, you’ll think you’re eating mashed potatoes!

Whole30 + Keto Pork Chops with Bacon Mushroom Sauce
Ingredients
- 4 slices of bacon, sliced
- 4 8-ounce pork chops (I get my hormone + antibiotic free pork chops from ButcherBox, which I highly recommend!)
- 2 teaspoons salt
- 2 teaspoons pepper
- 1/2 yellow onion, chopped
- 8 ounces mushrooms, sliced
- 2 cloves of garlic, grated or finely minced
- 1 cup chicken stock
- 1 teaspoon arrowroot powder
- 2 teaspoons fresh thyme leaves
- zest from 1 lemon
- 2 tablespoons cashew cream, <- link to homemade, could substitute Nutpods Original Flavor
Instructions
- Preheat your oven to 425ºF. Line a rimmed baking sheet with parchment paper and a wire baking rack.
- Add the sliced bacon to your cold cast iron skillet. Heat it up to medium heat. Stir the bacon occasionally until crispy. Remove from the pan, and drain the cooked bacon on a paper towel.
- Score the fat cap on the pork chops to prevent them from curling up while cooking. Season generously with salt + pepper.
- In the same cast iron skillet, sear the pork chops in the rendered bacon drippings. About 2 minutes per side and edge until crispy and golden brown. Transfer the pork chops to the rimmed baking sheet with wire rack. Finish cooking in the oven until the pork chops have an internal temperature of 145ºF, about 10 minutes.
- While the pork chops are finishing in the oven, make the sauce. In the same cast iron skillet with the drippings, add the sliced onion, mushrooms, and a pinch of salt and pepper. Cook, stirring occasionally, for 5 minutes until soft. Add in the garlic and cook until fragrant, 30 seconds.
- In a jar or small bowl, whisk together the chicken stock and arrowroot powder. Pour over the mushrooms and onions, using a wooden spoon to scrape up and brown bits from the bottom of the cast iron skillet. Bring to a simmer to activate the arrowroot powder to thicken, then turn off the heat.
- Add in the cooked bacon, thyme leaves, lemon zest + cashew cream. Stir to combine.
- Serve the pork chops warm with the bacon mushroom sauce. I especially love this served with my cauliflower mash! Garnish with more fresh thyme.
- Leftovers will keep refrigerated in an airtight container for at least 5 days.

Made this tonight for a low carb dinner and it was DELICIOUS! Feels indulgent, but it really isn’t—the ingredients are very reasonable. Thanks for creating this yummy recipe!
I love that it felt indulgent with simple ingredients Caryn. That makes my day!
I have made a lot of mushroom gravies and this one was by far the best. The thyme is a great finisher, although I left the lemon zest off because my grandson never likes it. But, this recipe the whole family loved! Thank you!
I love hearing that you have made a lot of mushroom gravy and this was your favorite Sherry. Thank you so much for the feedback, I really appreciate it.
Well that was the best pork chop I have ever cooked! Amazing, thank you!

The chops were delicious and the gravy OUT OF THIS WORLD! My husband’s first comment was Mmmmmm – like really long. We enjoyed this recipe and it was easy to make.

I am so happy you liked my pork chops Jess! I love to hear that it is one of your favorite recipes!
The sauce is so yummy! I think I overcooked my chops since I was multi tasking and they were smaller than the ones you had in this recipe. I love the lemon zest. It really needs that to brighten it! Having it with roasted radishes and asparagus 🙌🏻💜
I am so happy you liked my pork chops Whitney. The lemon zest really does brighten the sauce and make the flavors pop! Serving it with roasted radishes and asparagus sounds delicious. I too have over cooked the chops when you get busy multi-tasking.

My husband always tells me this is one of his favorite meals whenever I make it. Do not skip scoring the fat cap, this makes a huge difference. These are so good!!
I am so happy you like my pork chops Katie! I love that it is your husbands favorite meal! I agree, do not skip scoring the fat cap!
This was excellent!! Doing another Whole30, this was a welcome dish to add to my recipes. Everyone who tried this was oohing and ahhing. My Whole30 partner is my niece. When I shared this meal with her she said, “this tastes like Thanksgiving!”. I really believe the bacon drippings is what took this over the top. Thank you Natalie for sharing this. Looking forward to trying some of your other recipes.
Wow! What a nice comment Mary! You just made my day. I am so happy you liked my pork chops. That is fantastic that your niece is your Whole30 partner. Congratulations to both of you on your journey. I wish you so much success!
So good. So flavorful. Felt fancy without taking a ton of time. Quick and easy!
Thank you so much for your nice comments Heather! I am so happy you like my pork chops! I love that they were fancy without being too time consuming. That is music to my ears!
Thank you for sharing this! Whenever I’d make this recipe, I would use all the ingredients you have mentioned and follow these steps.
Thanks so much for the nice comment Hrelate. I am not sure if you have made these pork chops or not, but I sure hope you enjoy them.
Great recipe!! My sauce didn’t turn out quite as dark as yours in the picture. I did use corn starch instead of arrowroot because I don’t have that on hand and it’s hard to find in my area. Loved cooking the pork in the bacon grease and adding it to the sauce. Thanks for posting!
I am so happy you liked my pork chops Nicole! Cooking it in the bacon drippings adds the best flavor. I think using cornstarch may have made your sauce a little lighter, but should have changed the flavor at all. Sometimes you just have to use what you have on hand and I am so happy it worked out well for you.
OMG, this is amazing!! Comfort food all the way. Thank you for sharing!!
Yeah! So happy you liked this Lucinda! I agree is is a fantastic comfort food. I am so glad it turned out well for you. Thanks so much for letting me know.
Delicious comfort food!
So glad you liked this Michelle!
These pork chops with gravy were sooo tasty! I made them tonight for our family’s dinner, along with mashed cauliflower, steamed carrots (not keto!), and oven roasted asparagus.
Thank you for putting together such a great dish and sharing it!
Our family Loved it! I will be making these again!
Hi Valerie – I am so thrilled you liked this! The dinner you made sounds absolutely delicious and so healthy too. I am so happy your family loved it and you will be making it again.
Such a tasty and decadent dish! It feels fancy without being overly fussy and is a dish we will make again and again. We can’t eat nuts so I subbed out the cashew cream and added just a bit of coconut milk cream and a tad more arrowroot for thickening. Worked great and tasted delicious. Thanks for another great recipe Natalie!
Those are some fantastic tweaks Stacey. I am so glad this turned out well for you. Coconut cream is a great sub for cashew cream.
My husband and I made this recipe last week for the first time and it won’t be the last… we LOVED it! Taste Lovely makes it so easy with her step-by-step video demos. We had so much fun in the kitchen preparing this, then in the dining room enjoying it.
I have been loving this dish from the moment I cooked it! Firstly, it is very fragrant, and secondly, of course, it is incredibly tasty! I like the combination of ingredients and the fact that this recipe is not as simple as it seems. I mean, there are a lot of spices, and it is impossible to fully predict and feel the future smell and taste of the dish. All in all, these pork chops with bacon mushroom sauce are amazing. Thank you for the recipe! I recommend everyone to cook this dish.
Ann! Thank you so so so so so so much! This just made my whole day! It is one of our favorites too.
Made this for the first time tonight. I left out the mushrooms due to my husband isn’t a fan. It was so good!
Yea yea yea! So happy to hear that Whits! Love that you made it the same day. Makes my heart so happy!
Can you use dairy cream instead of cashew?
Yes! Absolutely! If you have no issues with dairy heavy cream (or even sour cream) would be great for this!
