1 pound radishes, cut bite size
1 tablespoon avocado oil (or olive oil)
1 teaspoon salt
1 teaspoon pepper
Preheat your oven to 425ºF. Line a rimmed baking sheet with parchment paper for easy cleanup.
Roast for 35-45 minutes, until soft and the edges are crispy.
Serve warm. Leftovers will keep in an air tight container refrigerated for at least 5 days.
