Ingredients

  • 2 medium rutabagas peeled and cut into fry shapes
  • 2 tablespoons avocado oil
  • 1 teaspoon salt

Instructions

  • Heat your oven to 425ºF with the oven rack in the middle. Line a rimmed baking sheet with parchment paper for easy cleanup. Set in a wire baking rack.
  • Toss the rutabaga keto fries in avocado oil. Lay the fries in an even layer. Season with salt.

  • Roast for 40-50 minutes until tender and getting crispy.

Expert Tips

  • Wire Rack: these keto fries turn out the crispiest when cooked on a wire rack, allowing the air to circulate around the french fry. You can cook them directly on the baking sheet if you don't have an air fryer. You may need to toss once or twice while roasting for even cooking.
  • Air Fryer: You can make these keto fries in your air fryer. Just toss them in the oil, place them in the air fryer basket, and air fry them at 380ºF for 20-30 minutes.
  • Carb Count: I've found tons of differing carb counts for rutabagas, but the most consistent was around 5-6 net carbs for medium rutabaga (about 1 cup worth).
  • My Favorite Dips: What’s a french fry without a dip? These keto dipping sauces make these keto fries even more delicious (and that’s saying a lot!): ketchup (seriously the best Whole30 + keto ketchup!), Whole30 + Keto ranch dressing, and Whole30 + Keto pesto aioli.
  • Seasonings: You can switch things up and season these fries however you like. Try garlic salt, garlic powder, black pepper, chili powder, dill, rosemary, etc.
