  • Heat the almond milk and cocoa butter in a microwave safe container for 3 minutes.
    1-1/2 cups almond milk
  • Add the cocoa powder, monk fruit and pinch of salt. (And peppermint extract if using) Whisk to combine. (Or combine them in a blender over low speed)
    1 teaspoon cocoa butter, 3 tablespoons cocoa powder, 2 tablespoons monk fruit, pinch kosher salt, 4 drops peppermint extract
  • Serve warm, topped with coconut whipped cream.

Notes

Milk: Unsweetened almond milk is my go-to, but you could use your favorite keto milk or milk substitute. Also great with coconut milk.
Cocoa Butter: If you don't have cocoa butter, you can substitute coconut oil. Use refined coconut oil if you don't like the taste of coconut. Same quantity.
Sweetener: If you don't need to keep it keto, you can use any sweetener of your choice. Maple syrup, coconut sugar, honey, or even regular sugar. Same quantity, or more to taste.
Chocolate Garnish: I shaved on some Lily's keto dark chocolate bar on top as a garnish.
