Keto Crusted French Toast

Keto Crusted French Toast is a dairy-free french toast recipe that is coated in a crispy Maple Waffle cereal crust. Breakfast is ready in 15 minutes!

Ingredients

Batter

  • 2 eggs
  • 1/2 cup french vanilla Nutpods see Notes

French Toast

Instructions

Batter

  • In a medium size bowl, make the batter by beating the eggs with the nutpods.
    2 eggs, 1/2 cup french vanilla Nutpods

Crust:

  • Make the crust by pulsing the maple waffle magic spoon cereal in a food processor until coarse crumbs (or crush in a bag).

  • Pour the crust into another medium size bowl.

Make the French Toast

  • Heat your cast iron skillet over medium low heat for 5 minutes.
  • Dip each slice of bread in the egg wash, pressing gently with your fingers to help it soak up the batter.

  • Then, dredge the bread in the crust and coat both sides.
  • When your pan is warm, add the ghee.
    2 tablespoons ghee
  • Cook the french toast for about 2 minutes per side, until golden brown.

Serving

  • Top the french toast with fresh berries and 2 tablespoons keto friendly syrup.
  • Serve warm.
  • Leftovers will keep in an airtight container refrigerated for at least 5 days, or frozen for at least 6 months.

Notes

Nutpods: I love using Nutpods, but you could use vanilla almond milk, coconut milk (or any dairy free liquid). If you're ok with dairy, heavy cream would work too. Same amount for any liquid substitution.
Egg Free: I don't think this can be made egg free? If you try an egg free version and it works please leave a comment and let me know how you did it!
Cereal: My favorite keto friendly cereal to use is the Maple Waffle Magic Spoon (code TASTESLOVELY for $5 off). You could use any other keto friendly cereal, I haven't found any others that I love though. I bet shredded unsweetened coconut could work too if you have that on hand!
Keto Bread: I'm still working my way through tasting all the keto breads. For this one I used Chompies which is actually great because it's so thick! But any keto friendly bread would work.
Skillet: I love my cast iron skillet, but any large skillet would work.
Leftovers: I'd reheat leftovers (from the fridge or thawed from the freezer) either in a toaster or best would be too crisp up again in ghee in a cast iron skillet over medium low heat.
Toppings: My favorite toppings are strawberries, blueberries and keto friendly syrup. But feel free to use what you have and love!
