- 4 cups mini bell peppers whole
- 2 tablespoons olive oil or avocado oil
- 1 teaspoon salt + pepper
Preheat oven to 425ºF. Line a rimmed baking sheet with parchment paper.
In a bowl, toss the whole bell peppers with the olive oil. Spread in an even layer on the rimmed baking sheet. Sprinkle with salt + pepper.
Roast for 25-30 minutes, until soft and starting to get char marks.
Serve warm. Eat whole, just discard the stem!
Leftovers will keep in an airtight container for at least 5 days.
