These whole30 + keto roasted mini bell peppers take about 1 minute to prep, and the oven does all the work for you! Just drizzle in olive oil, salt + pepper and roast away.

Mini bell peppers don’t have ribs and seeds, so you don’t need to cut them. You can roast them whole!

Plus, I find the mini ones to taste even sweeter and have the best flavor.

Whole30 + Keto Roasted Mini Bell Peppers

How to roast mini bell peppers in the oven. A delicious and low carb side dish!

Ingredients 
 

  • 4 cups mini bell peppers, whole
  • 2 tablespoons olive oil, or avocado oil
  • 1 teaspoon salt + pepper

Equipment

Instructions 

  • Preheat oven to 425ºF. Line a rimmed baking sheet with parchment paper.
  • In a bowl, toss the whole bell peppers with the olive oil. Spread in an even layer on the rimmed baking sheet. Sprinkle with salt + pepper.
  • Roast for 25-30 minutes, until soft and starting to get char marks.
  • Serve warm. Eat whole, just discard the stem!
  • Leftovers will keep in an airtight container for at least 5 days.
