These whole30 + keto roasted mini bell peppers take about 1 minute to prep, and the oven does all the work for you! Just drizzle in olive oil, salt + pepper and roast away.
Mini bell peppers don’t have ribs and seeds, so you don’t need to cut them. You can roast them whole!
Plus, I find the mini ones to taste even sweeter and have the best flavor.

4 cups mini bell peppers, whole
2 tablespoons olive oil (or avocado oil)
1 teaspoon salt + pepper
Preheat oven to 425ºF. Line a rimmed baking sheet with parchment paper.
Roast for 25-30 minutes, until soft and starting to get char marks.
Serve warm. Eat whole, just discard the stem!
Leftovers will keep in an airtight container for at least 5 days.
