The cauliflower thins obsession continues! Now let’s use them to make mini low carb pizzas that take just 5 minutes, are only 4 net carbs and taste just like the real deal!! This keto pizza recipe is so easy and so yummy! The thins make the perfect quick and easy keto pizza crust and are perfect for the whole family (my kids LOVE them!).
Keto Mini Pizzas
You just need 4 ingredients: cauliflower thins (can get at Trader Joe’s or on Amazon!), jarred marinara sauce, mozzarella cheese, and pepperoni (I cut them into small triangles so they fit better). I also had some fresh basil in my garden that I added on. But really, the topping possibilities are endless!
Toast up the thins in your toaster, assemble your pizzas, then broil for just 2 minutes until bubbling and golden brown!

Keto Mini Cauliflower Thin Pizzas
Ingredients
- 2 cauliflower thins, Trader Joe's makes one, or Outer Aisle Gourmet sells them on Amazon!
- 2 tablespoons jarred marinara sauce
- 4 pepperonis, cut into small triangles
- 1/4 cup shredded mozzarella cheese
- fresh basil for topping, optional
Instructions
- Toast the Cauliflower Thins in the toaster. PRO TIP! I put my toaster on it's side so the thins stay flat. Otherwise they kind of sag down as they're toasting if you keep the toaster upright.
- Set your oven to BROIL.
- Place the toasted cauliflower thins in a rimmed baking sheet. Top each cauliflower thin with marinara sauce, mozzarella cheese and pepperoni.
- BROIL for just 2-3 minutes until bubbling and golden brown.
- Let it rest for a minute or 2. Top with fresh basil (optional) and enjoy!

Hi Suzanne! In the notes at the bottom, I gave this tip: “Toast the Cauliflower Thins in the toaster. PRO TIP! I put my toaster on its side so the thins stay flat. Otherwise they kind of sag down as they’re toasting if you keep the toaster upright.” Try that and see if it works!
