Do you ever have a joke so good, you make yourself laugh?
Well I thought of the best joke when Shawn and I were driving.
“Hey Shawn, you know the Mike Rowe, the guy from Dirty Jobs. I just realized his name is like micro. What do you think his brothers name is? Mac?”
I started laughing so hard. I felt like a genius.
“Get it Shawn? Mike Rowe? Micro? Mac Rowe? Macro? That’s a pretty good one, right?”
“Ya Nat. And they probably live on Skid Row.”
“Mine was better Shawn, but nice try…”
I can make a good joke, and I can make an even better salad dressing. With teeny, tiny Mike Rowe, I mean micro poppy seeds. Haha!
I’m loving this paleo strawberry poppyseed salad dressing. It’s so easy to make, just throw the 6 ingredients in a blender or food processor. A great use of fresh strawberries which are particularly gorgeous this spring.
Most importantly, this paleo strawberry poppyseed dressing tastes delicious. Fresh and bright. Perfect salad topping.
Paleo Strawberry Poppyseed Salad Dressing
Ingredients
- 1/2 cup olive oil
- 1/3 cup champagne vinegar
- 1/4 cup honey
- 1/4 cup strawberries, stem removed (about 4 medium size strawberries)
- 1 tablespoon poppyseeds
- 1/4 teaspoon salt
Instructions
- Combine all the ingredients in a food processor or blender, and blend until the strawberries are liquified.
- Refrigerate in an airtight container. Will keep for 2 weeks.

I made this last night for a kale salad, with nuts and mandarins. Everyone loved it. Great recipe! I’m going to try freezing half of it for salads in my future.

Great recipe. Used this with a homemade version of the ” panera strawberry salad; lettuce, green onions, mandarin orange pieces, strawberries, pineapple,blueberries, grilled chicken and pecan pieces. Thanks for the recipe.
