Benefits of Homemade Bone Broth
I’m sure you’ve heard all about bone broth. It’s great for you gut, your bone + joint health and your immunity. Bone broth supports weight loss, better sleep, and it helps fight inflammation.
Plus it is packed with vitamins and minerals.
Uses of Homemade Bone Broth
I use bone broth as I would chicken stock or chicken broth.
Bone broth is perfect for soups and sauces, braising meats, or as a flavorful ingredient in meatballs.
What Bones to Use in Homemade Bone Broth
I get all of my chickens from ButcherBox (which I highly recommend!). They are the absolute best source for pastured chickens that are hormone and antibiotic free. To get the most value out of my ButcherBox order, I get whole chickens and break them down myself. I have a whole post on how to break down a whole chicken, and I save the carcass and all the bones for bone broth.
This recipe needs the carcass and bones of 2 whole chickens. We eat 2 chickens a week, so I have enough to make a batch of bone broth once a week.
If you are in a pinch, you can also buy chicken backs from your butcher. I’ve gotten them at Whole Foods before. They’re very cheap. You would want 2-4 chicken backs.
This isn’t a bone broth that gels. If you want that, you need to use at least 4 chicken feet since they have such a high amount of cartilage. You can source those straight from the farmer, asian markets, and sometimes Whole Foods has it!
How To Make Homemade Bone Broth
The instant pot has completely changed my life by how much it has simplified making bone broth. Before, I would simmer in on the stove for 24 hours and my house would smell so strongly of bone broth for days.
Now, I can make it in the instant pot for 3 hours, and it contains all of the smell!
I add all the ingredients to my 6 quart instant pot, add in the chicken carcass and bones (if the carcass and bones are frozen, I throw them in frozen! It’s amazing!). I cook it over manual pressure for 3 hours, then strain it and it’s ready.
Storing Bone Broth + How Long Does Bone Broth Last
I love storing my bone broth in quart mason jars. If I’m refrigerating them, I’ll fill the jars all the way to the top. If I’m planning on freezing the bone broth, I will fill the jars just below the crook in the neck. About 3 cups worth.
Bone broth will last for at last 1 week in the refrigerator. Just check for spoilage. If it gets a solidified fat cap at the top of the bone broth, it will last for so long in the fridge. A month for sure.
It will last for at least 1 year in the freezer.

Instant Pot Chicken Stock Bone Broth (Paleo, Whole30, Keto)
Ingredients
- Carcass and bones from 2 chickens*, I get my chickens from ButcherBox, which I highly recommend!
- 2 medium carrots, cut in half
- 2 stalks of celery, cut in half
- 1 yellow onion, cut in half (you can leave the skin on)
- 1 head of garlic, cut in half (you can leave the skin on)
- 6 sprigs of fresh rosemary
- 6 sprigs of fresh thyme
- 1 bay leaf
- 1 tablespoon salt
- 1 tablespoon peppercorns
- 1 tablespoon apple cider vinegar
- Enough water to reach the 2/3 full line on your Instant Pot, about 8-10 cups
Instructions
- Add all the ingredients to your Instant Pot, then fill with water until it reaches the 2/3 full line.
- Close your Instant Pot. Make sure the pressure valve is in the closed position. Press MANUAL PRESSURE, and set the timer for 3:00 hours.
- After it is done cooking, allow the pressure to naturally release for at least 15 minutes. After that you can do a quick release.
- Put a colander over a large mixing bowl. Pour the bone broth into the colander. Lift the colander to strain out all the solids. Discard the solids. I like the chicken fat in my bone broth, so I leave it. If you don't want the fat, you can wait until it cools and spoon off the fat from the top.
- Transfer the bone broth to quart mason jars. Fill up to the top if storing in the refrigerator. Fill up to just below the neck if storing in the freezer (about 3 cups worth).
- Will keep in the fridge for at least 1 week (just check for spoilage), or in the freezer for 6 months.

I’m excited to try this! Does it gel up when it’s not hot? How do you reheat it when you’re ready for a mug of coziness?
It depends on the bones you use. The more joints in the bone the more it will gell. If you want it to gel your best bet is chicken feet. You can get them at Whole Foods or Asian markets. Add 2 to 3 chicken feet for maximum gel effect.

I haven’t recipe tested the broth with 1 carcass, but I would probably half the ingredients Michelle. I would probably reduce the cooking time by 1/2 hour and taste test. Cook longer if necessary. You can also freeze the carcass and wait until you have a second one.

Ok, so I have never used an actual pressure cooker – just the Instant Pot. The Instant Pot just has different features, one of which is a pressure cooker, so I think it would be the same but I can’t say for sure. My best guess is the directions would remain the same.

First time making bone broth and it came out dark brown & bitter. Diluting w/ water didnt help . I followed the recipe exactly. Any thoughts on what went wrong?
Shoot! I am so sorry your bone broth was bitter Sharon. The bone broth should not be bitter at all. The only thing I can think of is maybe the carcass was cooked before and perhaps charred? That would make it taste bitter. Other than that I can not think of anything that would make it taste bitter.
could be the onion skin. i used to keep a bag of onion scraps in the freezer to make stock, but i found the onion skin to make the broth dark & bitter. so now i take the onion skin off the scraps.
Hi! I just wanted to recommend to burn the onions on a dry pan before putting them in the pot. That will give the broth another layer of taste. ?

Thanks for the question Michelle. Yes you can use dried herbs instead of fresh, although I really do prefer fresh. The dried can be a bit stronger in flavor. I haven’t recipe tested the broth with dried herbs but I would guess about 1/2 teaspoon would be a good starting point.

Does it have to be a raw carcass? I tend to buy full roasted chickens from Costco and freeze the cacass/bones after I take off all the meat. Will this work too? Does the cook time change since they’re not raw?

It doesn’t have to be, but I like to do that so it doesn’t raise the internal temp of my fridge, freezer and overly heat my cold foods already in there.
Can your bone broth be made without an instant pot, like with a crock pot? Would you recommend?
Yes! You would just need to cook the bones on low heat for about 24 hours. I’ve made it in the crockpot before and it works! But honestly, it tastes better, cooks faster, and it doesn’t fill your house with such a strong bone broth smell when made in the instant pot. It’s the main reason I got one. So if you’re on the hunt for one, I highly recommend this one! On sale for less than $90!
