Pico De Gallo

I am so excited to be doing my very first blog post on my new food blog! I absolutely love cooking, and this will be a great way to share my favorite recipes {along with remembering everything I cook}. I have been wanting to start Tastes Lovely for a long time, but wanted to wait until I got the design and website just right. I’m looking forward to an exciting new adventure in cooking and photographing food. Hope you all enjoy!
What better recipe to start off with than salsa?! It is one of my favorite snacks, and is the best part of going out for Mexican food. I’ve been known to polish off an entire basket of chips and salsa on my own, sometimes even two. Embarrassing? No. It’s that good.
Talk about an easy recipe. Just 5 ingredients: tomatoes, onion, cilantro, jalapeño, and lime juice. Chop, chop, chop, throw it all in a bowl, season with salt, let sit for 30 minutes, and you have fresh, delicious salsa. Don’t forget the tortilla chips!
This year I planted 9 tomato plants in my garden. Soon I’ll have more tomatoes than I know what to do with! This is a great way to use them up, and it keeps for at least a week in the fridge.
Pico De Gallo
Ingredients
- 6-8 roma tomatoes, seeded and chopped small
- 1/2 white onion, chopped small
- 1/2 bunch of cilantro, chopped
- 1 jalapeño, seeded and chopped very fine
- juice of 1 lime
- 1 tsp salt
Instructions
- 1. Combine the tomatoes, onion, cilantro, jalapeño and lime juice in a bowl the season with salt
- 2. Cover and let rest in the refrigerator for 30 minutes to allow flavors to marry
- 3. Serve with tortilla chips or on top of your favorite Mexican dish
- 4. Will keep refrigerated in an airtight container for 1 week

I posted on Face book that you should add your recipe for Vegetarian Fahitas that you fixed at my house. That was so flavorful that I didn’t even miss the meat!
Re the Pico de Gallo- Susan told me onc, a long time age that just adding fresh chopped cilantro to store bought salsa makes it taste almost like homemade.
