Do you have a “go-to” salad at your home? Because this is mine. I make it *constantly*. It is delicious with any meal I serve it with. I make it so often, I consider it my Tastes Lovely Keto House Salad. You know, like how every restaurant has their signature salad? This is mine.

This is a super simple recipe. It never occurred to me to share it because it is so dang simple. But whenever this salad makes an appearance on my Instagram Stories, I get sooooo many questions on what is in it, what the salad dressing is, and what kind of lettuce I’m using.

This salad recipe makes me insanely happy, and I must share it with you so you can enjoy it your home all summer long.

Salad Ingredients

There are 2 stars of the show here. The first is the salad dressing, which is made with oil from my beloved marinated onions. It is my favorite way to use up the onion oil. Because that oil is DELICIOUS! Perfect for a salad dressing. I sweeten it with a bit of monk fruit, add in a pinch of salt and dijon mustard and it’s good to go! Don’t have marinated onions? I add in how to recreate it in the recipe notes.

The next is the lettuce. I use SUPER thinly sliced romaine lettuce and spinach. I love the crunch from the romaine and all the vitamins and minerals in the spinach. To add some crunch I add in some finely chopped cucumber, and you’ve got my Keto House Salad!

Tastes Lovely Keto House Salad

This Tastes Lovely Keto House Salad Recipe is my low carb signature “house salad” that is my go to side salad to serve with any meal.

Ingredients 
 

  • 2 tablespoons marinated onion oil
  • 1 teaspoon monk fruit
  • 1 teaspoon dijon mustard
  • 1/4 teaspoon salt
  • 1 cup thinly sliced romaine lettuce
  • 1 cup thinly sliced spinach
  • 2 tablespoons finely chopped english cucumber

Instructions 

  • Start by making the dressing in the bottom of the bowl. Combine the marinated onion oil, monk fruit, dijon mustard and salt. Whisk to combine. Taste, and adjust seasoning if needed.
  • Add in the romaine lettuce, spinach + cucumber. Toss in the dressing.
  • Enjoy!

Notes

If you don't need it to be keto, you can use any sweetener you want in the dressing. Same measurement, or more to taste. Date paste would make it Whole30!
If you don't have a batch of marinated onions to use, you can mimic the base with 1.5 tablespoons olive oil, .5 tablespoons red wine vinegar and a pinch of dried oregano.
