Moist Blueberry Muffins
I made some blueberry muffins to brighten up your Thursday!
This is kind of a big deal, because I am a self proclaimed non-baker. But I’ve been practicing and practicing, and look at me! I made muffins that look like muffins! It took a few batches, but I finally got it right.
There was an unfortunate “baking powder is too old and these muffins didn’t rise and they look more like blueberry cups than blueberry muffins” situation. Nothing a quick trip to the store can’t fix. I’ve since discovered this great tip by David Lebowitz on how to tell if your baking soda is still good. I’ll be using this a lot in the future.
I was so proud of how these turned out, I rewarded myself by eating 3 of these muffins stat. 2 right after they came out of the oven, and a 3rd for dessert that I split open and toasted in the toaster oven. Both smothered in honey butter of course.
The secret to these muffins is using greek yogurt. It makes these blueberry muffins ultra moist on the inside, but still crispy and brown on the outside. I’ve started to prefer not using muffin liners when making muffins because I love that crispy brown exterior. A good coating of non-stick cooking spray does the trick.
These are great to make in the spring because blueberries don’t cost a million dollars. I used fresh, but you could easily use frozen. If using frozen, don’t thaw the blueberries, just throw them in still frozen with the dry ingredients. This will prevent them from dying your whole batter blue.
Don’t be alarmed if the batter seems dry, they cook up perfectly. You can easily divide the batter into the muffin tin using an ice-cream scoop. That will make the tops look very perfect and round looking. I prefer the craggy top look I got with these blueberry muffins by using 2 spoons to rustically plop in the batter.
Moist Blueberry Muffins
Ingredients
- 2 cups unbleached all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 egg
- 1 cup granulated sugar
- 4 tablespoons unsalted butter, melted and slightly cooled
- 1-1/4 cups plain greek yogurt
- 1-1/2 cups container fresh blueberries
- Non-stick cooking spray
Instructions
- Preheat oven to 350 degrees, with the rack in the middle position. Spray a 12 muffin tin with non-stick cooking spray.
- In a large mixing bowl, whisk together flour, baking powder and salt. Add in blueberries and toss to combine.
- In a separate medium mixing bowl, whisk egg for about 20 seconds until it becomes lighter in color and slightly frothy. Add sugar to the egg and whisk to combine. Then add in butter and whisk to combine. Add greek yogurt, whisking until just combined.
- Pour the wet ingredients into the dry ingredients, and gently fold until just combined. The batter should look a little dry and stiff, and there may still be a few pockets of dried flour.
- Divide the batter evenly, and bake for 25-30 minutes until golden brown and an inserted skewer comes out clean. Rotate the muffin tin halfway thru baking.
- Allow to cool for 1 minute, then invert the mufins on a wire rack to cool for a few more minutes.
- Eat warm, or keep an an airtight container for up to 1 week.

These were wonderful and so simple! I happened to have canned blueberries on hand and no frozen ones (definitely no fresh ones as it is winter and I will not pay $5 a pint!) and it turned out great. This will be my go to recipe for blueberry muffins!

I just made these this morning, and they are delicious! I even messed up the recipe, and accidentally used 1 Teaspoon of baking powder instead of 1 tablespoon…oops!

I made these muffins yesterday morning for my husband to have on the way to the football game. They have a lovely crumb and the flavor was so nice. Today I made them with 1 cup of shredded cheddar cheese and 6 thick cut slices of bacon, cooked and crumbled into the dry ingredients. PERFECT. This is a an easy and delicious recipe that I hope to use as a base for further exploration.

These are delicious! I used frozen wild Maine blueberries and Fage 5% plain Greek yogurt. I may try vanilla Greek yogurt next time and reduce sugar just a bit. I will also make double batch next time!

These came out exactly like in the picture! Very moist and fluffy, even though I messed up mixing wet ingredients properly – just kinda threw everything in at the same time. I also used lemon yogurt and added a dash of vanilla extract – personal preference. Muffins turned out amazing!

My boyfriend has been begging for blueberry muffins since I moved in, so I decided to give these a try (despite having a dismal muffin-baking history!). Substituted vanilla for the plain greek yogurt since it was all I had on hand, but otherwise stuck to the recipe and these came out great! Not too sweet. At least I think so…we’ll see how he feels when he rolls out of bed in a few minutes to warm muffins fresh from the oven. What guy could complain about that?

Last weekend I was out of milk but I had some blueberries fresh from the farmers market and I wanted to make some muffins. I had some Greek yogurt in the fridge so I searched for blueberry muffins with Greek yogurt and found this recipe. They were absolutely fabulous. I’m dumping my old recipe for this one.

I made these yesterday for breakfast, they were great.
I made half the quantity as it’s just for my husband and myself. We had 2 each out of the oven and ate the rest this morning (6 total).
I reduced the sugar to 1/3 cup, and used half organic whole wheat pastry flour and half organic sprouted spelt flour as I don’t believe in all-purpose flour (pretty devoid of nutrients).
I will make them again!
What a great idea Sybil! The tricky thing with these muffins is you have so many left over if you’re making it for just 2 people. I’ll have to try that next time. Otherwise I’m giving lots of extra muffins to my neighbors : )

I have been having a muffin craving lately, so it’s like you read my mind with this post! Can’t beat a classic blueberry muffin, and I love the addition of Greek yogurt in this recipe. I had to laugh when you said in the spring blueberries don’t cost a million dollars. So true! We are big fresh berry eaters, and I have a hard time paying so much for fruit that is gone in less than a day. One more reason I’m glad for the season change.
