It’s only May, but it is warming up here in California. Which means grilled dinners galore! Nothing adds flavor to meat like grilling it.

My latest favorite dinner is this whole30 grilled chimichurri chicken. Such a simple recipe that tastes fresh and summery and perfect.

Last week I shared my recipe for chimichurri sauce. By brushing it on top of grilled chicken it takes them from meh to OH-YA!

You will grill the chicken plain, and in the last 3 minutes brush it with the chimichurri sauce. It infuses the chicken with flavor, but you still get crispy skin.

The best of both worlds.

Cuts of Chicken to use for Whole30 Grilled Chimichurri Chicken

My favorite cuts of chicken to use for this recipe is drumsticks and wings. I break down whole chickens to save money and get the exact cuts of chicken I like. (I’m looking at you skin-on, boneless chicken breasts!)

Drumsticks and wings are my absolute favorite on the grill. They have so much skin that gets crispy and golden brown. Plus, the bone keeps the meat juicy and flavorful.

If you think you don’t like dark meat, try grilling it. I promise it will be your new favorite.

I photographed this using just drumsticks and wings, but you could make this whole30 grilled chimichurri chicken using any cut of chicken.

You could use breasts, thighs, or even break down a whole chicken and grill all the cuts in this method.

My kids love this too! There is nothing cuter than a 3 year old eating a drumstick and getting all messy and covered in healthy green chimichurri sauce.

Whole30 Grilled Chimichurri Chicken (Keto, Paleo)

This Whole30 Grilled Chimichurri Chicken Recipe is crispy grilled chicken topped with fresh & bright chimichurri sauce.

Ingredients 
 

Instructions 

  • Preheat your grill over medium high heat. Clean and oil the grates.
  • Season the chicken generously on all sides with salt and pepper.
  • Add the chicken to the grill and cover. Every 5 minutes open the cover and turn the chicken. Cook until the skin is crispy and the chicken has an internal temperature of 165ºF, about 15-20 minutes.
  • In the last 3 minutes of cooking, brush the chicken with the chimichurri sauce, then grill for the remaining 3 minutes.
  • Remove from the grill, rest for 5 minutes, then serve warm with additional chimichurri sauce.
  • Leftovers will keep in an airtight container refrigerated for 5 days.

Notes

You can use any cuts of chicken for this recipe! Breasts, thighs, or even break down a whole chicken and cook all the cuts in this method.
If you don't have a grill, you can make this in the oven! Instead of using a grill, place the chicken on a rimmed baking sheet with a wire rack. Roast at 425ºF until the chicken is cooked to an internal temperature of 165ºF, about 20-25 minutes. In the last 3 minutes of cooking, brush the chicken with the chimichurri sauce, then roast for the remaining 3 minutes.
