Whole30 + Keto Sautéed Kale

To give it maximum flavor, I like to first sauté onions until soft and golden in color.

Then add in the kale and cook until tender and flavorful.

Whole30 + Keto Sautéed Kale

This Whole30 + Keto Sautéed Kale Recipe is a perfectly sautéed kale in a cast iron skillet with onions + garlic.

Ingredients 
 

  • 1 tablespoon avocado oil, or ghee, coconut oil or olive oil
  • 2 bunches of kale, stems removed, leaves sliced
  • 1/2 a yellow onion, thinly sliced
  • 1 teaspoon salt + pepper
  • 2 cloves of garlic, grated or finely minced

Instructions 

  • Heat your cast iron skillet over medium heat for 5 minutes. Add your cooking fat to the pan. Add the onions, season with a pinch of salt. Cook, stirring occasionally, until soft and turning golden brown, about 5-8 minutes.
  • Add in the kale and stir with the sauteed onions. Season with salt + pepper. Cook until the kale is soft and wilted, another 5 minutes.
  • Add the garlic and cook for 30 seconds until fragrant. Taste for seasoning and add more salt + pepper if needed.
  • Serve warm.
  • Leftovers will keep for 5 days in an airtight container refrigerated.
