Whole30 + Keto Shaved Brussels Sprouts Recipe – caramelized onions with tender, crispy shaved brussels sprouts. Paleo, low carb, gluten free, grain free, dairy free, sugar free, clean eating, real food.
If you think roasted brussels sprouts are good, wait until you try shaved brussels sprouts!
I shave them 1/4″ thick using a mandoline (and these cut proof gloves so I don’t lose a finger tip!). Add in some shaved onions, garlic, salt, pepper and a little squeeze of lemon and you’ve got tender, crispy edges brussels sprouts that are only 4 carbs a serving!
Whole30 + Keto Shaved Brussels Sprouts
Caramelized onions with tender, crispy shaved brussels sprouts.
Ingredients
- 2 tablespoon olive oil, or ghee, avocado oil, coconut oil
- 1 pound brussels sprouts, shaved (I love this mandoline and these cut proof gloves!)
- 1 small yellow onion, shaved (I use the mandoline again!)
- 1 clove of garlic, grated or finely minced
- 1 teaspoon salt + pepper
- squeeze of fresh lemon juice, optional
Instructions
- Heat a cast iron skillet over medium heat.
- Add the olive oil, brussels sprouts, onion, salt + pepper. Sautee for 10-15 minutes until the onion is caramelized and the brussels sprouts have crispy edges.
- Add in the grated garlic, and sautee for 30 seconds until fragrant.
- Add in a squeeze of lemon, (optional)
- Serve warm.

My new favorite vegetable! I cook these all the time, but served them for the first time to my sister and her family. Okay, mind blown! I had not idea you could shave brussel sprouts. Hubby is not a brussels recipe like I am so I thought that he might like them better this way and he did. I have learned that shaved brussel sprouts freeze well and are delish saluted and served with eggs, my new breakfast go to. Thank you Nathalie for the inspiration.
