I’m forever making a great big low carb salad for lunch, packed with veggies and dark leafy greens. Best way to fill me up with food and nourishment. This keto broccoli salad with almond butter balsamic dressing has been on heavy rotation lately.

Almond Butter Balsamic Dressing

The real star of this salad is the dressing. It is AMAZING!

Just 4 ingredients: olive oil, almond butter, balsamic vinegar + dijon mustard. The combination of balsamic and almond butter is seriously blowing my mind. I can’t get enough of it. Gives a great, deep nutty flavor that compliments the balsamic perfectly.

Ingredients 
 

Almond Butter Balsamic Butter

  • 3 tablespoons olive oil
  • 1 tablespoon almond butter
  • 2 teaspoons balsamic vinegar
  • 1 teaspoon dijon mustard

Broccoli Salad

  • half a head romaine lettuce, thinly sliced
  • 1 cup spinach, chopped
  • 1/2 cup broccoli, finely chopped
  • 1/4 cup cucumber, thinly sliced
  • 2 tablespoons bell pepper, thinly sliced
  • 1 green onion, sliced
  • 2 tablespoons blueberries
  • half an avocado, sliced
  • 1/4 cup sliced almonds

Instructions 

  • In the bottom of a salad bowl, add the dressing ingredients. Whisk with a fork to combine.
  • On top of the dressing, add in all the salad ingredients. Toss to combine. Enjoy!

Notes

Nut Butter: My favorite nut butter to use for this is my mixed nut butter. Almond butter, sunflower butter, peanut butter, etc would all work. Use what you have!
