I’m forever making a great big low carb salad for lunch, packed with veggies and dark leafy greens. Best way to fill me up with food and nourishment. This keto broccoli salad with almond butter balsamic dressing has been on heavy rotation lately.
Almond Butter Balsamic Dressing
The real star of this salad is the dressing. It is AMAZING!
Just 4 ingredients: olive oil, almond butter, balsamic vinegar + dijon mustard. The combination of balsamic and almond butter is seriously blowing my mind. I can’t get enough of it. Gives a great, deep nutty flavor that compliments the balsamic perfectly.
Keto Broccoli Salad with Almond Butter Balsamic Dressing
Ingredients
Almond Butter Balsamic Butter
- 3 tablespoons olive oil
- 1 tablespoon almond butter
- 2 teaspoons balsamic vinegar
- 1 teaspoon dijon mustard
Broccoli Salad
- half a head romaine lettuce, thinly sliced
- 1 cup spinach, chopped
- 1/2 cup broccoli, finely chopped
- 1/4 cup cucumber, thinly sliced
- 2 tablespoons bell pepper, thinly sliced
- 1 green onion, sliced
- 2 tablespoons blueberries
- half an avocado, sliced
- 1/4 cup sliced almonds
Instructions
- In the bottom of a salad bowl, add the dressing ingredients. Whisk with a fork to combine.
- On top of the dressing, add in all the salad ingredients. Toss to combine. Enjoy!

Quick question: Why is the carb count so high? Where did 27 grams of carbs come from? That one meal put you over your prescribed daily carb limit of 25. I was so impressed with your recent monthly weight loss with you eating this salad every day, and I’m dying to try it but I’m confused on the carb count. Is there any way to lower it………..what can be omitted? Thanks very much!
I think the carb count is offset by the amount of fiber and nutrition in the salad PJ. It is such a healthy and delicious salad. You could eliminate the blueberries, avocado and balsamic to reduce the carbs if you would prefer. I don’t mind the count at all because it is all good healthy carbs.I sure hope you like the salad!

This salad really hit the spot! This is a combo of flavors I’d never think to make; it was so tasty I immediately made a second bowl. All of the components add something – the balsamic, the nut butter, the olive oil, the broccoli, the almonds, the avocado, etc. Can’t wait to eat this for lunch tomorrow!
