Keto Sheet Pan Chicken Shawarma Bowls

Trader Joe’s is killing it in their ready-made section! This week I found pre-marinated Shawarma Chicken Thighs and I just had to make something with them! I am so happy with how these bowls turned out and they are for sure going into my recipe rotation.

While I love making my own marinades, this saves a ton of time. So if you’re on the go like me these days, you are going to love this recipe!

Packed with cauliflower rice, tomatoes, and spinach, this bowl is full of veggies. Add the chicken and top with tzatziki dip and you have a filling, flavorful meal full of needed protein and fat! Trader Joe’s Ingredients Needed

Here are the ingredients I grabbed for this recipe:

  • frozen cauliflower rice
  • tzatziki dip

Keto Trader Joe’s Recipe Tips, Tricks, & Substitutions

Chicken: I am obsessed with pre-marinated Trader Joe’s Chicken Shawarma Thighs. They’re in the refrigerated meat section with all the other meats. If you don’t have a Trader Joe’s near you, you can substitute plain chicken thighs seasoned with olive oil and salt (oregano or greek seasoning would work too!) I need to recreate this marinade because I’m obsessed!

Cauliflower Rice: Cooking cauliflower rice on the sheet pan is my new favorite. So hands off! You could also cook it in the skillet if that’s easier for you. 1 big tip. Just 1 bag of cauliflower rice is going to give you a moderate scoop. My husband and I usually split a bag of cauliflower rice. So if you like a generous scoop of cauliflower rice make 2 bags for 4 generous helpings!

Tzatziki: The Trader Joe’s store bought tzatziki is very tasty! Would recommend! Most stores have premade tzatziki sauce if you don’t live near a Trader Joe’s. If you feel like an even cleaner ingredients list, I have a homemade tzatziki recipe that I also love love love.

Dairy Free: If you need this to be dairy free, Trader Joe’s has a vegan tzatziki! I think it’s made with soy? I haven’t tried it yet, but it was also the same carb count. Or! You can make my homemade tzatziki recipe that uses coconut yogurt so dairy free and whole30 friendly!

Whole30: If you need this to be Whole30, use plain chicken thighs seasoned with olive oil and kosher salt, and them make my homemade tzatziki recipe that uses coconut yogurt so dairy free and whole30 friendly!

Keto Sheet Pan Chicken Shawarma Bowls

Marinated shawarma chicken thighs roasted on a sheet pan, then served over spinach with cauliflower rice, tomatoes and tzatziki sauce. A 5 item keto dinner from Trader Joe's!

Ingredients 
 

  • 1 package Trader Joe's Chicken Shawarma Thighs, about 1.5 pounds
  • 12 ounces frozen cauliflower rice
  • 2 tablespoons olive oil
  • 6 ounces organic spinach
  • 10 ounce carton cherry tomatoes, sliced in half
  • 12 ounce container tzatziki
  • kosher salt

Instructions 

  • Preheat your oven to 425ºF.
  • Line a rimmed baking sheet with parchment paper (for easy cleanup) and set in its wire rack. Lay the marinated chicken thighs in an even layer on the wire rack. Roast for 30 minutes, or until crispy and caramelized on the edges.
  • Get another rimmed baking sheet, and drizzle it with 1 tablespoon olive oil. Lightly pound the bag of frozen cauliflower rice to break up and clumps. Lay the cauliflower rice in an even layer, and break up any other clumps you see. Drizzle it with 1 more tablespoon olive oil, then season with kosher salt (about 1/2 teaspoon). Roast for 25 minutes, until it is starting to turn golden brown on the edges. (Depending on your oven, you may need to turn the cauliflower rice once while roasting. My oven cooks really evenly, so no need for me to flip mine.)
  • Remove the chicken and cauliflower rice from the oven. Chop the chicken thighs into bite size pieces.
  • Assemble each bowl with a big handful of spinach and top with 1/4th of the cauliflower rice, 1/4th of the chicken shawarma, the tomatoes and 2 tablespoons tzatziki. Season the tomatoes with kosher salt.
  • Leftovers will keep in an airtight container refrigerated for at least 5 days, or frozen for at least 6 months.
