I just love January. It’s the perfect time to start fresh. New Year, New You.

In the past 3 weeks we have gotten a ton of little project done around the house that have been on the To Do list since we moved in over the summer. We Shawn knocked down the old, falling apart shed that was leaking and apparently was once home to many mice considering all the mice nests Shawn found in there. Eeek! In it’s place is a huge, new shed that one of our neighbors gave to my dad, for free! I cannot tell you how great it is to have outdoor storage. I got some clear bins to organize our stuff, and they’re now neatly stacked in there, along with Shawn’s golf clubs, a new tool box he got himself, and a little shelving area for my photography boards and props. It’s an organization dream!

Shawn also built a pedestal/storage unit to put under our washer and dryer out of plywood. I am so excited about it! It’s going to be our storage for all of our camera equipment, which is currently taking up an entire corner in our room. Just need to wait for the paint to dry! And figure out how we’re going to lift the immensely heavy dryer on it. Maybe I’ll just call The Hulk? Because there is no way I am going to be any help lifting that thing.

Tuna in Cucumber Cups

Along with getting our house all squared away, we’ve also been eating a lot healthier. After all the indulgent holiday foods and eating (and drinking!) to our hearts content for a week in Mexico over Christmas, the start of the New Year has been a great time to jump start healthier eating habits. We are doing the Whole30 program, which is focused on eating whole and healthy meat, vegetables, fruits, nuts and healthy oils. Basically Paleo, but no sugar or sweetener of any kind. And no alcohol. We are over a week in and I am loving it! Feeling much more energized, less sluggish, but I sure do miss my glass of red wine.

I maaaay have had just 1 glass on Friday, shhh! It’s basically just grapes, right? At least that’s how I justified it to myself.

One of my favorite snacks or lunch lately are these tuna in cucumber cups. When it comes to tuna, I always buy Bumble Bee® tuna because it is simply the best. And thanks to my homemade mayo recipe, this recipe is Paleo and Whole30 approved!

Tuna in Cucumber Cups

After a day of organizing the shed, these tuna cucumber cups made a great afternoon snack. They also make a great appetizer. What’s not to love about an edible cup? The less dishes I have to do, the better.

Tuna in Cucumber Cups

Healthy and delicious tuna in cucumber cups. A cute snack or appetizer of tuna in scooped out cucumber slices. Low carb, paleo and Whole30 approved!

Ingredients 
 

  • 1 large english cucumber, cut into 1” thick slices
  • 1 5 ounce can tuna, drained and water squeezed out
  • 1/3 cup of mayonnaise
  • 1 teaspoon black pepper
  • fresh dill for garnish

Instructions 

  • Using a melon baller or small spoon, scoop the seeds out of the cucumber slices, leaving about 1/4" on the bottom to make them into little cups. Once they have all been scooped, squeeze the water from the cucumber pulp you have scooped out, and finely chop it.
  • In a small mixing bowl, combine the drained tuna, finely chopped cucumber pulp, mayo and pepper. Stir to combine. Taste to see if you want to add more mayo or pepper.
  • If your cucumber cups have a lot of moisture, dab away the water using a paper towel. Then fill each cucumber cup with tuna, and garnish with dill.
