Whole30 + Keto Mango Salsa Using Frozen Mango

When it comes to mango, I actually prefer it frozen. When it thaws, it is exactly like it was when raw! Still firm and has a bite to it. Unlike strawberries, which when frozen and thawed are mushy and squishy.

Bonus? You don’t need to cut it, which is kind of tricky with mangos. Or gamble on finding a perfectly ripe one at the store. Frozen mango is picked, cut and frozen at peak freshness, so the frozen is always good. Plus, it lasts forever in your freezer! No food waste!

To make the salsa, just combine the thawed mango, red onion, jalapeno, cilantro, lime juice and salt. Blend until it’s your desired consistency and enjoy!

Ingredients 
 

  • 4 cups frozen mango chunks, about 16 ounces, thawed
  • 1/2 cup cilantro leaves, packed
  • 1/4 cup chopped red onion
  • 1 jalapeno, ribs and seeds removed, chopped
  • 1 teaspoon salt
  • juice from 1 lime

Equipment

Instructions 

  • In your food processor, add all the ingredients. Pulse until chopped and combined.
  • Enjoy immediately. Or store in a pint mason jar or airtight container for up to 1 week. Delicious on meat, seafood, or with chips!

You can use fresh also! I just love the convenience of using thawed frozen
