You know what one of the best parts of being a stay at home mom is?
Besides being with my cute little boy 24/7? Who is getting more and more fun every day. (He’s smiling and giggling like crazy now and I love it!). And not having to change out of my yoga pants if I don’t need to?
Grocery shopping in the late morning when everyone else is at work.
It really is amazing. Life changing even. I actually look forward to grocery shopping now.
When I was working in an office full time, I had to grocery shop after work, or worse, on weekends. Along with every other working person in town. The crowded aisles. The understocked fruits and vegetables that are overly picked over. The long checkout lines. The worst!
Now, Josh and I go around 10am, and you would think I called ahead and reserved the grocery store all to myself. There are usually just 20 other people in the whole store shopping, mostly moms with little babies like me. I get the best fruits and vegetables, and can take up as much of the aisle as I want.
It’s the simple things in life, right?
And if simple things make you as happy as they make me, you are going to love this maple mustard glazed salmon. It is only 3 ingredients. 3 ingredients! Just salmon, mustard, and maple syrup. It doesn’t get easier than that.
And it doesn’t get much tastier either. Maple and mustard go so well together. Perfect on top of salmon. I love the combo on chicken too!
This maple mustard glazed salmon comes together in a flash too. I sear the salmon off in a pan to get a nice crust on top, just for 2 minutes. Then I flip it, top it with the maple mustard glaze, and throw the pan in the oven to finish cooking for another 5-10 minutes. I love serving this with my garlicky green beans, which I cook while the salmon is in the oven. Dinner is on the table in less than 20 minutes!

Maple Mustard Glazed Salmon {3 Ingredients!}
Ingredients
- 4 6-ounce wild caught salmon filets
- 1/2 cup grainy mustard
- 1/4 cup pure maple syrup
- salt and pepper
- 1 tablespoon coconut oil
Instructions
- Preheat oven to 300 degrees with the oven rack in the middle. Preheat an oven safe skillet over medium high heat.
- In a small mixing bowl, combine the mustard and maple syrup. Set aside.
- Pat the salmon dry with a paper towel. Season with salt and pepper. Add the coconut oil to the pan. Cook the salmon (skin side UP if it has skin) for just 2 minutes to get a crust. Flip the salmon, top with the maple mustard sauce, and bake in the oven until it reaches an internal temperature of 135 degrees. The baking time will depend on how thick your salmon is, but generally around 5-10 minutes.
- Serve warm.

I love grocery shopping in the mornings! I went on Tuesday around 11am and the shelves were fully stocked…shocking! I’m all about this salmon, especially since it has just three ingredients! Sounds perfect for a weeknight meal!
