Ingredients in Whole30 + Keto Cauliflower Rice Risotto
I discovered this ingredient on accident when making my whole30 + keto mashed cauliflower. Before adding it to the food processor I tasted it, and realized that it tasted so similarly to risotto!
The ingredients are so simple. I use frozen cauliflower rice, which is my favorite. Pre-chopped for you, much more mild cauliflower flavor than raw or refrigerated pre-chopped, and you can always have it on hand!
The risotto gets its amazing flavor from ghee, garlic, cashew cream and my homemade chicken stock.

Whole30 + Keto Cauliflower Rice Risotto
Ingredients
- 2 tablespoons ghee
- 2 12-ounce bags frozen cauliflower rice
- 1 teaspoon kosher salt
- 1 teaspoon pepper
- 1 clove of garlic, grated or finely minced
- 1/2 cup bone broth, can sub chicken stock or chicken broth
- 1/2 cup cashew cream, <- link to homemade, could substitute original flavor nutpod
Instructions
- Heat a large skillet over medium high heat. Add the ghee, frozen cauliflower rice, salt + pepper. Stir until the rice is thawed, about 5 minutes.
- Add in the grated garlic and stir for 30 seconds until fragrant.
- Pour in the bone broth and cashew cream. Stir and continue cooking over medium heat for 5-10 minutes until the liquid is absorbed. Feel free to add in more bone broth if you want your risotto to be a thinner consistency.
- Serve warm. Leftovers will keep refrigerated in an airtight container for 5 days.

I stumbled across this recipe and haven’t tried it yet but want to. Can I use regular butter instead of ghee and will cashew milk work or does it have to be cream? In that case will cooking cream work?
I haven’t recipe tested those particular swaps for the risotto, but I think butter would work just fine as a substitute for ghee Lina. Cashew milk may not be quite thick enough to substitute for cashew cream, but it may work. You could also sub heavy cream or Nut Pods original flavor for the cashew cream.

Can I use vegetable broth instead of chicken broth?

WOW – I started liking risotto as an adult, but that is also when I became lactose intolerant, so I stopped eating it! This is a great recipe! I used Nutpods, and it’s so creamy and “cheesy”. Love this!!

Is there a recommended substitute for the cashew cream? I have a tree nut allergy.
Thanks so much for the question Leah. Since you have a nut allergy I would probably substitute coconut cream. Coconut is technically as a fruit so I sure hope you aren’t allergic to coconut. I think that would taste fantastic!

Ummmm YUM! I made this with your greek chicken thighs and artichokes and it was sooo delicious! I mean I couldn’t wait to eat it again the next day! My husband is not a huge fan of cauliflower rice so I was curious what he would think, he devoured it! I accidentally added a little too much pepper, but my husband thought it was perfect. I have to say, I am not a huge fan of riced cauliflower! I have tried to season it and disguise its taste for a while, and just can’t seem to find a way to cook it that I like. I tried this last night, and it was delicious! I altered it a little by cooking a few slices of bacon to add to it, and holy cow! SO GOOD! I cooked shrimp to go with it, and it was delicious! I will definitely be making this again!

This recipe is so delicious and really easy to make. I was a little intimidated to make it at first be6its outside of my normal cooking comfort zone, but I’m so glad I did! I added some sauteed mushrooms to it and my whole family (even my 3 year old) loved it!

I haven’t tried this yet and new to this whole clean eating thing. Isn’t Ghee butter and isn’t butter dairy? How can it be dairy-free? I am doing WildFit and we are dairy and sugar-free.
Ghee is just the fat from butter. All the dairy solids have been separated. So it is fine to consume if you have issues digesting dairy! It is allowed on Whole30, and would be fine for WildFit that is dairy and sugar free!
