These are a spin on my extremely popular Dairy Free Peanut Butter Cookies. Have you made those yet? That recipe has so many comments from readers who have made it and loved it! It is made without flour. Just peanut butter, eggs, sugar, vanilla and baking soda.
Many of you commented or emailed asking if the recipe could be made using almond butter and/or a paleo friendly sweetener. I did some testing, and now have this paleo friendly almond butter cookie version that I must say, I like even MORE!
Ingredients in Paleo Almond Butter Cookies
Just like the dairy free peanut butter cookies, this recipe also skips a flour or flour replacement all together.
These cookies are made with just almond butter, coconut sugar, 1 egg, vanilla and baking soda. All ingredients you probably have in your kitchen right now! I use my homemade almond butter, since it is my very favorite. But you could use store bought also.
Sweetener In Paleo Almond Butter Cookies
I played around with different paleo friendly sweeteners to use. Coconut sugar was by far my favorite.
Coconut sugar gives it this amazing, caramelized flavor that I love even more than regular sugar. Honey and maple syrup add too much liquid to the batter, so I don’t recommend substituting them. The cookies get much too thin.
These taste like a legit cookie you would get at a bakery. Crispy on the outer edges, just the slightest bit soft and gooey in the center. And since there is no flour, the cookie has an intense almond butter flavor that I can’t get enough of.
There is no need to do the typical cross hash with a fork that peanut butter cookies need. There is more fat in the almond butter, so the cookies spread fine themselves without having to be flattened out.
When I give these to family and friends, they don’t believe me when I tell them they are paleo. They’re that good!
The 1 year old loves these cookies too, and I love giving them to him! They have healthy fats from the almond butter, and I love that they are refined sugar free. Great dessert to give to little ones.

Paleo Almond Butter Cookies
Ingredients
- 1 cup almond butter, or store bought works too, room temperature
- 1 cup coconut sugar
- 1 large egg, room temperature
- 1 teaspoon baking soda
- 1 teaspoon pure vanilla extract
Instructions
- Preheat oven to 350º with 2 oven racks closest to the center. Line 2 baking sheets with parchment paper or a silpat.
- Combine all ingredients in a medium size bowl and stir to combine.
- Use a medium size cookie scoop to scoop out the dough (1.5 tablespoon balls), placing them on the baking sheet with enough room to spread out.
- Bake for 9-10 minutes, until the edges are set and the centers are puffed. (The cookies will flatten and "crackle" as they cool) Cool for 10 minutes and enjoy! Particularly good with my homemade almond milk.
- Cookies will keep in an airtight container for 1 week, or in the freezer for 1 year.

These turned out great! Usually my mom hates gluten free cookies I make but she approves of these lol. Also I deviated from the recipe a bit, added a little less baking soda and cut the almond butter with cashew butter thanks to winco allowing me to get small amounts of the nut butters without having to pay for the whole container. Thanks for the recipie! Oh and also added a smidgen of cinnamon – tastes like molasses cookies!!

i added cacao nibs, chopped pecans, monkfruit sweetener ,unsweetened shredded coconut and some hazelnuts AWESOME !!!!! get creative ! the almond butter cookies are so good and guilt free also dont forget cinnamon and vanilla aisha

I made this for a craft party last year and they were wonderful! This year, to make them a bit more holiday, I replaced half the vanilla extract with rum extract and added a dash of cinnamon. They are so good!

These are such fun to make! I used regular sugar instead of coconut sugar because I was out. They are very quick to mix up (I didn’t wait for the nut butter or egg to come to room temperature because I am impatient) and very quick to bake. I appreciate easy, delicious, gluten free recipes that I can make with my kids and not end up irritated or with a huge mess to clean up! We will be making these again and often I suspect. Yes! I’ve had other readers try it. Monkfruit for sure! In the same quantity as coconut sugar!

Yea! I’m so glad you liked them Kimberly! You could definitely get away with less sugar. The cookies might be a tad runnier/softer though, since the ratio will be off of “dry” sugar to the almond butter. Let me know how they turn out. They may work just fine since the egg will help bind them enough.

Yes! They won’t be Paleo, but will still taste delicious.

Can I make these vegan? DO you think I can use bean water or flax egg as a chicken egg substitute?
You know, I’ve never tried them with a vegan egg substitute. Maybe a flax egg would work? If you try it and it works, let me know!
You can substitute 1 tablespoon ground chia seeds and 3 tablespoons plus 1 teaspoon water for the egg. Works perfect! Great flavor.

I love this recipe!! I always substitute with stevia to make it more keto friendly. I have found chopped walnuts can help make the cookies a bit less crumbly.

I didn’t have coconut sugar so just used Stevia … I didn’t find them that great at the start … but the taste does grow on ya ! Lol

My cookies didn’t flatten at all. I wonder why? The almond butter was separated with all the oil at the top but I mixed it all in so I thought there would be enough fat. Hmmmm
Sometimes with certain brands of almond butter, they’re a little “drier” and the cookies won’t flatten as much. Or if the almond butter is super cold from the fridge they won’t spread as easily. They should taste just as delicious! You can always try flattening them next time with a fork like you would with traditional peanut butter cookies. Hope you loved them!

Can I half the recipe but still use 1 egg or is it not possible? Thanks for sharing!
Maybe! I haven’t tried it, but I would maybe crack the egg in a bowl, beat it, and just add in half of it? I think the whole egg with half the other ingredients might make these cookies extra stiff. Otherwise, if you make the full batch these cookies freeze beautifully!
Delicious – followed the recipe exactly only mine did not go down flat. Perhaps the nut butter was a bit dry? Anyhow, when I checked on the first tray they were still very perky and round so I quickly smooshed them with a fork and they were a bit cracked but held together well and were tasty. For the second batch, pressed them first with a fork and they puffed up nicely leaving classic peanut butter cookie marks. Will definitely make again.
Ya, sometimes with drier nut butters they don’t spread as much. They still taste just as delicious though! They’re just “taller”. Pressing them down definitely works! So glad you liked them. Thanks for letting me know you liked my recipe, made my day!
I made them and their dark in the center still very yummy
Just wondering if they are supposed to be crispy or goey
They should be soft in the center, but not gooey runny, with crisp/set edges. You should bake them another minute or 2 until they are no longer runny.

I too added about 2/3 cup chopped walnuts, which gives it a little more crunch! I made the mistake of putting them all on a very large cookie sheet thinking they would not spread out too much, which they did! Baked them 10 minutes & used the Kirkland Almond butter, they were one of the best simple paleo cookies I ever baked! Thanks!!!
