Whole30 + Keto Chimichurri Shrimp
Ingredients
- 1 pound frozen peeled & deveined medium to large size shrimp, thawed
- 1/2 cup chimichurri sauce + more for topping
- cauliflower risotto for serving
Equipment
Instructions
- In a medium size bowl, toss the shrimp in the chimichurri sauce. Allow to marinate for 5 minutes.
- Set your oven to HI BROIL with the oven rack in the upper 1/3.
- Line a rimmed baking sheet with parchment paper for easy cleanup. Make sure the parchment paper doesn't stick out or up, because if it touches the coils of the oven it will burn.
- Lay the shrimp in an even layer on the baking sheet.
- Broil the shrimp for 3-6 minutes depending on the size of the shrimp. The shrimp is done when it turns pink.
- Remove from the oven and serve warm topped with more chimichurri sauce if desired. Delicious served with my cauliflower rice risotto.
