Oh hello October. My very favorite month of the year.
The days are getting crisp. It’s getting dark earlier. I got the toddler so many cute fall flannel shirts and sweaters. Fall is here! Which also means it’s time for all things warm, cozy and of course, pumpkin. And this paleo & whole30 pumpkin spice latte is all 3.
I have gotten so many emails from readers who love my paleo & whole30 vanilla latte. It really does taste better than Starbucks! Made with almond milk and real vanilla bean. The tastiest and healthiest latte you can have.
So as soon as it started getting cool out, and I saw all those cute orange colored Starbucks cups out, I knew I wanted to tweak that recipe to make a paleo & whole30 friendly pumpkin spice latte. And I nailed it!
Unlike Starbucks, this pumpkin spice latte is made with real pumpkin. No artificial flavors here! I use my homemade almond milk, which I find froths the best. But you can use store bought almond milk as well. To give it that great, warm spice, I add in pumpkin pie spice.
It tastes delicious! Warm, slightly sweet from the pumpkin, with lots of fall spice.
And just like my paleo & whole30 vanilla latte, this latte is made in the blender with dark roast coffee! No fancy espresso machine needed. It works best in a high speed blender so it can really whip up the almond milk to give it that great foam. I love my Vitamix!
To make this coffee drink feel extra fancy, I topped it with some paleo whipped coconut cream. Totally optional, but kind of worth it. To keep it Whole30 friendly, I didn’t add any sweetener to it. But feel free to sweeten it if you wish!
Whole30 + Keto Pumpkin Spice Latte
Ingredients
- 1 cup hot, strong brewed dark roast coffee (this is my favorite!)
- 1/2 cup almond milk
- 2 tablespoons pumpkin puree
- 1/4 teaspoon pumpkin pie spice
- paleo coconut whipped cream as topping, optional
Instructions
- Put all the ingredients in a high speed blender (I love my Vitamix!), and blend on high speed for 90 seconds.
- Serve warm, and optionally top with coconut whipped cream and a sprinkle of pumpkin pie spice.
