The meals and grocery shopping list is for a family of 4 (or family of 2 who likes leftovers!). Monday (Memorial Day!)
Turkey Burgers with Whipped Spinach Feta & Balsamic Caramelized Onions served with Crispy Oven Baked Wedge Fries // It’s the official start of summer, which means it’s also the official start of grilling season! Enjoy these turkey burgers with crispy oven baked wedge fries. The burger recipe is enough to make 8 burgers, and be sure to double the wedge fry recipe too. Invite over your friends and neighbors!
Rainbow Chopped Thai Chicken Salad // A colorful and crunchy chicken salad tossed with a peanut thai dressing.
Coconut Chicken and Vegetable Thai Curry // This is my favorite thai curry recipe packed with vegetables and chicken, topped with a flavorful coconut curry sauce.
Creamy Mushroom and Bell Pepper Pasta served with bread // A fast and tasty vegetarian pasta that is ready in just 15 minutes.
- Make the whipped spinach feta for the turkey burgers, refrigerate in an airtight container.
- Make the balsamic caramelized onions for the turkey burgers, refrigerate in an airtight container.
- Make the thai salad dressing for the Thai salad, refrigerate in an airtight container.
- Make the rice for the thai curry, refrigerate in an airtight container. Microwave for 5 minutes before serving, fluff with a fork.
