What Makes This Recipe Great
This easy coconut lime rice is SO insanely delicious I could eat it every single day. It couldn’t be easier to make! I made mine on the stove top but I’ve also given instructions on how to pressure cook or make in a rice cooker. A super simple side dish that complements any main protein, stir fry, burrito bowls, and more!
I start off by sauteeing plain rice in coconut oil for just a minute to really get the coconut flavors started. Then, I add 1 can of low-fat canned coconut milk and let it cook for 35 minutes as it soaks up all the delicious coconut flavor. After the rice is done cooking, you fluff it with a fork, stir in some lime zest and lime juice, and devour.
It results in the most fluffy rice with a mild coconut flavor and tastes like something you would eat on a tropical vacation. I serve this coconut lime rice with grilled fish, shrimp tacos, or this Thai Coconut Lime Chicken. The options are endless!

Ingredient Notes
- coconut oil
- white jasmine rice: I prefer to use long-grain white rice for this recipe. If you choose to use brown rice, see the notes below. You can use leftover rice or short-grain rice if you prefer–it’s really up to you!
- canned low-fat coconut milk: Use a can of unsweetened coconut milk or coconut cream. Make sure it’s unsweetened! You can use full-fat coconut milk if desired.
- lime zest: You’ll need the zest of 1 lime for this recipe. I recommend zesting the lime first and then slicing it in half for the lime juice.
- fresh lime juice
- salt to taste
Step-by-Step Instructions
- Rinse the rice in a fine mesh strainer under cold running water until the water runs clear.
- In a small saucepan over medium heat, saute the rice in the coconut oil for just 1 minute. Pour in the can of coconut milk and stir to combine.
- Bring to a boil, cover with a lid, and reduce heat to low. Simmer the rice covered for 35 minutes. Remove from heat, and allow to sit with the lid on for another 10 minutes.
- Remove the lid, fluff the rice with a fork, then stir in the lime zest, lime juice, and salt to taste. Serve this delicious side dish warm with your favorite mains.
Expert Tips
- Brown Rice: This recipe is the ratio of white or jasmine rice. If using brown rice, you will need more liquid and cook it for longer. Follow your specific rice’s cooking directions, and replace water with equal parts coconut milk.
- Instant Pot Coconut Rice Recipe: 1. Rinse the 2 cups Jasmine rice under cold running water until the water runs clear. 2. Add the rice, coconut milk, salt, and coconut oil to the Instant Pot and stir to combine. 4. Press the Saute function and saute for one minute 3. Close the lid of the Instant Pot and set the valve to “sealing.” 5. Select the “rice” function or set on manual high pressure for 4 minutes. 6. When the cooking time is up, allow the pressure to do a natural release for 10 minutes, then release any remaining pressure. 7. Fluff the rice with a fork and serve.
- Rice Cooker: If you would prefer to make this coconut jasmine rice in your rice cooker, follow the manufacturer’s instructions for your specific machine. Add the rice and coconut milk, then, when the rice is done cooking, finish the cooked rice with step 3.
What to Serve with Coconut Jasmine Rice
- Serve as a side dish with your favorite dishes. I love to serve my coconut lime rice with Thai dishes, curries, and proteins like chicken, fish, or shrimp. It’s a versatile side dish that can be enjoyed with so many entrees!
Storage Tips
- Store leftover coconut lime rice in an airtight container in the fridge. Reheat in the microwave and fluff with a fork before serving. Add a teaspoon of water if it needs it.
Recipe FAQs
Both of these types of rice are long grain rice, however they differ in origin, flavor, and texture. Jasmine rice is from Thailand, has a sweet floral aroma, sticky texture, and is used in Southeast Asian cuisine. Basmati rice is from India, has a nutty aroma, fluffy texture, and is used in Indian/Middle Eastern cuisine. Basmati also takes longer to cook.
This coconut lime rice is a great side dish and is healthy when eaten in moderation. The coconut milk is a great source of healthy fats and the lime is a great source of vitamin c. It’s also a gluten-free, dairy-free, and vegan dish, making it allergy, diet, and lifestyle friendly.

Wow, I would probably pack up and move immediately ;) Just kidding, or not. A limited amount of internet would be very bad for me. As it is, we have increased our cell phone plan and I still go over every month, opps. At least you have a delicious, cheap and easy recipe you can make to offset all of your interest costs!
Oh my gosh, I can’t believe how absurd that satellite internet is! That’s kind of crazy, considering how much people stream these days. We just cancelled our cable recently because it was so horrible and got a Roku and an Apple TV instead… so we’d be majorly screwed. Moral of the story is, ALL cable and internet providers are evil. Sigh. First world problems.
And…. your rice sounds yummy. Much fresher than Chipotle’s!
Internet problems are the worst! I feel for you, Natalie! But this rice looks delicious, so hopefully that helped just a little bit. I love this flavor combination! Such a brilliant idea. I wish I had a big bowl full of this right now!
What a crazy problem to have! I can’t even imagine having a cap on my internet use; I’m a bit of a data hog. And I’m mighty impressed by your restraint from binge watching tv all night:)
My stomach literally just growled for this rice, Natalie! At first I read “coconut lime pie”…nope…RICE. Brilliant! Pinning this for later!
Ugh, it is such an annoying problem Sarah! We’re lucky and are grandfathered in to “unlimited data” on our AT&T iPhones, so I’ve never had to keep an eye on my data usage, until now. Luckily we can plug our phones into our TV and stream Netflix that way. Otherwise, we would be pretty screwed.
This rice is so tasty! I hope you like it if you make it! And thanks for stopping by my blog! Off to check out yours : )
Oh no! How frustrating.
This sounds delicious though. I love coconut rice – it’s so creamy.
Really!? That’s ridiculous. I would be so mad. It’s like pioneer times for goodness sakes! I though internet was everywhere -they probably do that on purpose! Grrrr. Ha, you’re right about rice being cheap. I LOVE rice. All rice. I eat it nearly every day I love it so much. Infusing this with coconut milk would be killer! And your video is the best! Seeing food in action makes me hungry :)
Well, that’s a bummer about the internet. On the bright side you have the most adorable house! I’m in love with this recipe too, coconut lime rice sounds perfect to me. I bet my husband would love it too! Pinning this one, can’t wait to try it out :)
Sorry to hear about your internet bill…sounds rough! At least you had this yummy rice to soothe yourself with right? :-) It looks delicious!
Yikes, that stinks about the limit on streaming. Sorry to hear that sweetie :(
On the other hand, at least you have this amazing rice! Love love love coconut lime rice and yours looks absolutely perfect :)
Oh my gosh you have some crazy internet rules! I wouldn’t be able to stay on top of that at all and I’d never think about that channel being on. I’m always looking for a way to jazz up rice. It’s always so boring. Hello coconut and lime!
NO stinking way!! That’s a pain in the A**. Especially in the age of streaming 24/7 for everything. I mean, are movie stores even open to rent movies? Strange that you get free streaming then..clearly it’s because no one uses it then anyways lol. Sorry dear! This rice does look wonderful though!! Beyond wonderful. And i’m loving the simplicity of it. PLUS, now I need to go out and buy that can of coconut milk…a Trader Joe’s product I haven’t tried?!? What?? Thanks Natalie :)
Wow what a horrible situation. I can not imagine how crazy it must be and now you have to keep track of how much you’re using up. :((((
On the other hand this rice looks spectacular. It’s calling my name. I think it would go perfectly with grilled salmon I’m making tonight.
We don’t have the fastest internet speed either, but reading about your streaming dilemma, makes me feel bad about complaining when ours “buffers” once in a while ;). Let’s concentrate on your coconut lime rice though. I am not kidding when I say that I could eat one bowl after another of this stuff. I love Chipotles cilantro lime rice, but this version looks and sounds even better!!
This is such a great change from normal plain rice! Looks like the perfect summer side dish!
Wow, that’s not great about the internet! Yikes. This rice looks so nice! Darryl loves lime, so I may have to give this a try! Pinning.
Ahhhh … this looks so good that I think I’ll be serving it four nights this week!! I can think of so many things it would go well with.
I hear you on the Internet problem. We had the same problem in the UK recently when we were staying with our parents. My dad doesn’t usually use very much Internet, but we turned up and suddenly he went over his quota rather quickly … oops! Sorry, Dad! ;-)
That sounds so frustrating! I’d probably go over my data in one week! This has to be the most perfect, fluffy rice ever, and I bet it tastes amazing with the coconut oil, coconut milk, and lime!
Nat, you made me laugh when I read the sentence “Thank goodness rice is cheap, because with crazy internet bills like this, it might be the only food we can afford”. You are so funny, girl! I love your sense of humor!
Again I love you video and this recipe is great! Love this combo: coconut and rice.
Have a wonderful week my friend ;-)
I can practically taste all that citrus-y goodness — sounds delicious!
Wow! That is one bummer internet deal you’ve got! I’m pretty sure I couldn’t live without Netflix nearly every day so I don’t know how you’re dealing with it! LOL. And this rice! SO. FLUFFY. Omg I so want a big bowl of this right now! Love the flavors of coconut and lime together and I’m thinking I could even sneak some cilantro in there too (my cilantro plant is going CRAZY) Love this, Natalie! Pinned.
