Best Keto French Fry
I’ve tried to make fries out of so many low carb vegetables. I love these zucchini fries! But they feel more like a fun side dish that a french fry copycat.
Out of all the keto vegetables I tried, rutabagas are the winner. They hold their shape, get crispy edges when roasted, and taste really similar to a sweet potato!
Turnips were my second favorite, but they get a little wiggly. They don’t hold that fry shape when you pick them up. But have a flavor more similar to white potato.
Crispy Keto French Fries
I like to bake my french fries in the oven. It’s much easier than the air fryer, plus I can cook a lot more at once.
To get them extra crispy, I love using this sheet pan with its wire rack over it. It allows the air to circulate all around and prevent them from getting soggy.

What’s a french fry without a dip?
My favorite dips:
- this ketchup (seriously the best whole30 + keto ketchup!)
- whole30 + keto ranch dressing
- whole30 + keto pesto aioli

Keto French Fries
- Prep Time: 15 minutes
- Cook Time: 40 minutes
- Total Time: 55 minutes
- Yield: 2 1x
Ingredients
- 2 medium rutabagas, peeled and cut into fry shapes
- 1 tablespoon avocado oil
- 1 teaspoon salt
Instructions
- Heat your oven to 425ºF with the oven rack in the middle. Line a rimmed baking sheet with parchment paper for easy cleanup. Set in a wire baking rack.
- Toss the rutabaga fries in avocado oil. Lay the fries in an even layer. Season with salt.
- Roast for 40-50 minutes until tender and getting crispy.
- Serve warm with your favorite keto dipping sauce like ketchup or ranch!
Notes
You can make this in your air fryer! At about 380ºF for 20-30 minutes.
I’ve found tons of differing carb counts for rutabagas, but the most consistent was around 5-6 net carbs for a medium rutabaga (about 1 cup worth)

How do you cut them into such perfect fries? Is there a certain kitchen tool or appliance? Thank you!

I have a video on the recipe showing how I cut them Linda. Take a look at it. To cut the fries cut the top and bottom off the rutabaga. Then cutting from the top to bottom you cut into about 5 pieces, then cut those pieces into planks. You can also cut the round part off of the rutabaga to make it more square (like you would a potato) and cut those into planks. I WISH there was a tool to cut a perfect fry. Practice makes perfect!

What you are calling rutabagas are what we always grew as turnips.
Hi Donna – I think it is the color that is different between a rutabaga and a turnip.
These are SO GOOD! I put a pan of these in the oven, along with a pan w/ regular potatoes for my picky eaters. While I finish cooking our burgers, I’m snacking on these rhutabega fries – they TASTE LIKE CANDY! The family can have regular ol’ potato fries – I’m keeping these for myself!

I totally want to try these fries. I had one question, I’m allergic to avocados, so what kind of other oils can you use besides avocado oil? Been trying to eat healthier for my pregnancy and just in general. I’m addicted to potato fries right now… & I know they are very high in carbs so this looks like an amazing alternative that will help me satisfy my pregnancy cravings♡

at 72 carbs per serving, its not even close to being Keto. I eat less than 20 carbs per day, sometimes less than 10, some days 0. Which is the goal of keto, not having carbs forcing your body to burn ketones instead. You should change the name to low carb, but its not keto.
The carbs are 7.2 grams per serving, not 72 Mark. You’re right though, 72 would be way too much! I sure hope you like them, they are delicious.

A serving is one medium rutabaga? Is there a gram/ounce count to strive for consistency?
I didn’t actually weigh the rutabagas. Just look for medium sized rutabagas. I sure hope you like them Susan!
4 months into a very successful Keto diet and being a Potato lover do miss fries the most :( i have tried maybe 6 batches of Corabi, Rutabaga both and both seem to end up soft and overly sweet (like sweet potato) . Nothing seems to end up with a fries that can stay horizontal if you pick up on one end . i have cut them from 1/2 down to 1/8th inch and the thinner they get the sooner they need to come out of the oven else they go black. i always use Costco brand Avocado Oil as i am okay with that taste. I have tried my Ninja Airfryer which makes awesome chicken wings but seems to do nothing to making fries crispy
what am i doing wrong here?

Well you have me stumped Tom! I am not sure why your fries are coming out so soft. Make sure you are baking them on a wire rack so the air circulates and you will get a very crispy french fry. Also toss them completely with avocado oil to help the crisp up.
